WHere is a simplified take on a beverage featured on the seasonal cocktail list. Designed as a party-sized pre-mixed that is bursting with the flavours of a holiday season, which makes it excellent for hosting a festive gathering. Any leftover citrus syrup you can use for morning drinks, puddings, or to make another batch of bikinis.
Bikini Recipe
Yields 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Place every components into a pan, bring to a light boil, mixing to dissolve. After that, turn off the stove and leave to cool fully. Pour into a sealable bottle, cap it keeping it in the fridge, where it will keep for around a month.
Preparing the Premix: Combine every spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through muslin, so it's fully clarified.
To serve: Pour 85ml of your cocktail base to a cocktail shaker filled with ice, and stir carefully for a minute until cold. Strain into an cold coupe glass or a similar vessel, decorate with some cranberries adding the final touch with a brief mist with the mandarin essence above the glass.
